
Now you’re either a lover or a not so much lover, when it comes to pumpkin soup, I am a lover!! And I will be happy to have it however it comes, but I will tell you now, this pumpkin soup will change the minds of the not so much lovers out there!
A twist to the typical pumpkin soup, my Thai style has just the right amount of punch to have you craving for more, while also being an amazing immunity booster full of all the essentials, packed with turmeric, ginger, chilli, garlic and lime this soup will likely kick any winter flu to the curb!

Serves 4
Ingredients
1 – 2 tablespoons olive oil
1 x Brown onion diced
1 x Russian garlic clove finely diced
½ Kent pumpkin diced
1 x long red chilli
1 x Nob fresh turmeric
1 x Nob fresh ginger
5 x kaffir lime leaves– these will be removed at a later stage
3 x lemon grass stalk (cut in half, down centre) – these will be removed at a later stage
1 x Litre organic veggie stock or broth
1 x Tin coconut cream
1 x Lime rind– these will be removed at a later stage
Salt & pepper to taste
Lime juice for garnish
Coriander leaves for garnish

Method
In a large pot, start by heating the olive oil and slowly cooking onions so that they become translucent and soft, stir in the aromatics – chilli, turmeric, ginger, lemon grass, lime rind, lime leaves, stirring and allowing to heat quickly before adding in the pumpkin, allow to heat through for a few minutes, stirring occasionally.
Finally place in garlic and stock, stir through, place lid on pot bringing to the boil and then remove lid. Reduce heat and cook until pumpkin is soft and can be crushed against the side of the pot, at this time the liquid would have reduced a little.
Take off the heat and remove the lime rind, kaffir lime leaves and lemon grass stalks.
Blend with your stick blender, creating a thick, smooth consistency, stir through the coconut cream, place back onto a low heat, season with S&P.
To serve, garnish with coriander leaves a squeeze of lime juice, chilli flakes if you want a little more heat and off course crusty sourdough.
