Nanas Scottish Potato Soup

My beautiful Nana would make this soup in the wintertime or anytime we were feeling a little unwell to cure any ailment. This thrown together combo is so simple, yet so delicious. it brings me back to a tender childhood full of so many special memories.

This soup, is more than just a meal , it has been part of our family tradition for many decades, possibly even centuries, yet my nana is no longer around to ask those questions, so we eat with gratitude and a heart full of loving memories, that fill our cup in more ways than one.

I have however altered this recipe slightly by adding the garlic and rosemary, so traditionally this Scottish potato soup is very simple, cost effective and wholesome. I must admit she was a little heavy handed with the salt, but it made it all the better.

Best eaten with a side of fresh crusty white bread, slathered with way too much butter, hmmmm, you cannot go wrong!

Serves 4
Ingredients

1 – 2 tablespoons olive oil

1 x Brown onion, diced

1 x Large garlic clove, finely diced

½  x tsp finely diced rosemary 

1 x Swede, peeled and diced

2 x Large carrots, peeled and diced

4 x Large brushed potatoes, peeled and diced

1x Litre organic veggie stock or broth (certainly can be replaced with chicken broth) 

1 x Vegie OXO cube 

Salt & pepper to taste 

Method 

In a large pot, start by heating olive oil and slowly cooking onions so that they become translucent and meltingly soft, add rosemary stir in for 1 minute allowing the aroma to come through the onions.

Add all diced vegetables stir through allowing to start the heating process, add a little extra olive oil if the pot is becoming dry, stirring occasionally for a few minutes, add garlic, stock and oxo cube (dissolved in hot water) stir through, place lid on pot until all comes to the boil and then remove lid. 

Cook until vegetables are soft and can be crushed against the side of the pot, at this time the liquid would have reduced a little.

This soup is meant to be a chunky consistency, so, we do not blend it, but instead use a potato masher and mash altogether, season with salt and pepper. 

Serve With crusty bread, a slathering of organic butter, enjoy.
